1. SetupCut the cucumber in two horizontally then slice into half moons. Peel and grate the carrot. Roughly chop the cashews. Chop the mint. Thinly slice the lettuce. Cut the chicken into very thin strips.
2. Cook the noodlesBring a pot of water to a boil. Cook the noodles for 3-4 minutes or until tender. Keep 2 2P | 3 3P tbsp. of the cooking water then drain.
3. Cook the chickenWarm up a drizzle of oil in a pan over medium-high heat. Add salt and pepper to the chicken. Add the chicken to the pan and cook for 4-6 minutes or until it's cooked throughly. Remove from the pan.
4. Plate your dishIn a large bowl mix the noodles with the chicken, the cooking water, the sauce, the cucumber, the carrot, the mint, the lettuce and the cashews. Season with salt and pepper to taste then serve. Bon appétit!
