Beef Kofta and Mediterranean Salad

with tzaikiki, kalamata olives and feta cheese

1. Setup Chop the garlic, the cilantro and the dill. Chop half of the onion and slice the rest. Grate half of the cucumbers and slice the rest. Cut the romaine lettuce into pieces. Cut the lemon in half.
2. Make the beef mixture In a bowl, combine the ground beef, the chopped onions and the cilantro. Season with salt and pepper.
3. Cook the koftas Divide the beef mixture into 3 equal parts per person. Form long meatballs on the wooden chopsticks with the beef mixture. In a pan, over medium-high heat, add a drizzle of olive oil. Cook the beef koftas for 4-5 minutes on each side or until the meat is cooked.
4. Make the tzatziki and the dressing In a bowl, combine the yogurt, the grated cucumber, the garlic, the dill and the juice of half a lemon. Take the opportunity of this step to show the children all the ingredients that go into the tzatziki sauce, you can also adapt the sauce according to the food tastes of the family. In another bowl, combine the dried oregano, the juice of half a lemon, 1 2P | 2 3P tbsp of red wine vinegar and 2 2P | 3 3P tbsp of olive oil.
5. Make the salad In a bowl, combine the romaine lettuce, the cucumber slices, the onion slices, the olives, the crumbled feta and the dressing.
6. Plate your dish Serve the koftas with the salad and the tzatziki. Bon appétit!
