1. Setup Preheat the oven to 400 ° F. Chop the garlic, mint and half of the onion. Mince the other half of the onion. Dice the cucumbers and the tomato.
2. Cook the beef In a bowl, combine the beef, chopped onion, garlic and the spice blend. Mix well and season with salt and pepper. Form long balls by rolling them on the wooden sticks. Form 2-3 kofta per person. It's possible to make skewers with less meat for kids. Spread on a baking sheet. Bake for 12-15 minutes.
3. Mix the vegetables In a bowl, combine the cucumbers, tomatoes and the rest of the onions. Season with salt and pepper.
4. Make the sauce In a bowl, combine the yogurt, mint and the juice of half a lemon. Season with salt and pepper.
5. Plate your dish Serve the beef kofta with the vegetables. Garnish with the sauce and the pistachios. Serve with pita breads. Bon appetit!
