Beef Lasagna Soup

with lasagna noodles, italian spices, mozzarella and basil

1. Setup Chop the onion and spinach. Cut the tomatoes into small cubes. Thinly slice the basil.
2. Cook the beef Heat a drizzle of oil in a large pot over medium-high heat. Cook the beef 3-4 minutes until browned. Add salt and pepper. Remove with a slotted spoon and set aside.
3. Cook the vegetables Add the onion, tomato and spices in the pot and cook for 3-4 minutes. Crush the tomatoes using a potato masher. Add salt and pepper. Add the 2 2P | 3 3P tbsp. of tomato paste and 1 tbsp. of sugar and cook for 1-2 minutes.
4. Add the broth Add the broth cube, beef and 3.5 2P | 5.5 3P cups of water and bring to a boil. Cover and cook for 8-10 minutes over medium heat.
5. Cook the noodles Bring another pot of water to a boil. Break the noodles into pieces. Cook the lasagna noodles 6-8 minutes until tender. Drain.
6. Plate your dish Add the lasagna noodles, spinach and cheese in the soup. Adjust seasoning to taste. Serve and garnish with the basil. Bon appétit!
