BLT-inspired Seitan Pasta Salad

with lettuce, tomato, celery and parmesan

1. Cook the pasta Bring a pot of salted water to a boil. Cook the pasta 8-10 minutes until tender. Drain and rinse under cold water.
2. Setup Thinly slice the Seitan then roughly chop it. Cut the tomatoes and celery into small cubes. It's possible to keep some pieces larger to serve as crudités. Chop the lettuce. Thinly slice the green onion.
3. Cook the Seitan Heat a drizzle of oil in a pan over medium high heat. Cook the Seitan and smoked paprika for 4-5 minutes until browned.
4. Plate your dish Mix the pasta with the Seitan, vegetables, mayonnaise and grana padano. Add salt and pepper to taste. Bon appétit!
