Cauliflower Nachos

with pico de gallo and guacamole

1. Setup Preheat the oven to 425°F. Cut the cauliflower into pieces. Chop the onion and the cilantro. Cut the lime in half. Dice the tomato.
2. Roast the cauliflower Spread the cauliflower on a baking sheet. Add the spices (Be careful, spicy, to taste.) and a drizzle of olive oil. Bake for 20-25 minutes.
3. Make the pico de gallo In a bowl, combine the onions, the tomatoes, the cilantro and the juice of half a lime.
4. Assemble and cook in the oven Add the cheese to the roasted cauliflower and return to the oven for _6-8 minutes__.
5. Plate your dish Garnish the cauliflower with the sour cream, the guacamole, the pico de gallo and the jalapeños. Bon appétit!
