Fajitas Mac and Cheese

with onion, bell peppers and corn tortilla chips

1. Cook the pasta Bring a pot of salted water to a boil. Add the pasta and cook for 8-10 minutes until tender. Set aside 1/4 cup of the cooking water then drain.
2. Setup Slice the peppers into thin strips. Chop the onion. Cut the corn tortillas into small strips.
3. Cook the tortillas In a large pan over medium high heat, add a drizzle of oil. Cook the tortilla strips for 2-4 minutes until browned. Remove and transfer to paper towels.
4. Cook the peppers Add oil if needed. In the same pan, add the onion, peppers and spices. Cook 4-6 minutes, until tender. Add salt and pepper.
5. Add the pasta In the same pan over medium heat, add the flour and mix well 1 minute. Add the milk, stir then add the cheese and stir until melted into a sauce. Add the pasta and the cooking water. Season to taste with salt and pepper.
6. Plate your dish Serve the pasta and garnish with the tortilla chips. Bon appétit!
