Hawaiian Pork Burger

with pineapple, swiss cheese, chipotle sauce and potato wedges

1. Setup Preheat the oven to 425°F. Chop half of the shallot and slice the rest. Cut the potatoes into quarters. Chop half of the cilantro and separate the rest of the leaves from the stems.
2. Make the fries Pat dry the potatoes. Spread the potato wedges on a baking sheet. Drizzle with olive oil and season with salt and pepper. Cook in the oven for 25-30 minutes.
3. Grill the pineapples In a pan, over medium heat, grill 1 pineapple slices per person, 2-3 minutes on each side. Remove and set aside.
4. Make the burgers In a bowl, combine the ground pork with the chopped shallot and the chopped cilantro. Season with salt and pepper and mix well. In the same pan over medium-high heat, add a drizzle of olive oil. Form 1 pattie per person and cook for 4-5 minutes on each side. Add the swiss cheese, cover and cook for another 2-3 minutes or until the pork is cooked.
5. Make the sauce In a bowl, combine the mayonnaise with the chipotle adobo.
6. Plate your dish Toast the buns if desired. Garnish the buns with the sauce, the pork patties, the pineapple slices, the shallots and the cilantro leaves. Serve with the fries. Bon appétit!
