Lemon Shrimp and Zucchini

served on herbed couscous with a crudités and whipped feta appetizer

1. Setup Slice the zucchini into rounds. Slice the bread. Chop the parsley. Cut the cucumber and pepper into sticks. Zest the lemon and cut it in 2. Strain and peel the shrimps.
2. Prepare the appetizer In a food processor, add the feta, cream and roasted peppers. Pulse until it becomes a whipped feta. Adjust seasoning to taste. Add a drizzle of oil if desired. Set aside. In another bowl, mix the lemon zest with the juice of half a lemon, a drizzle of oil, salt and pepper. Add a pinch of sugar if desired. Set aside.
3. Cook the bread Heat a drizzle of oil in a skillet over medium-high heat. Add the bread slices and cook for about 1-2 minutes on each side until browned. Remove from skillet and set aside.
4. Cook the couscous Bring a saucepan with 1 2P | 1.5 3P cups of water and the broth cube to a boil. Add the couscous, cover and let absorb the liquid for 5-6 minutes. Break up the couscous with a fork and add a drizzle of oil, half of the parsley, salt and pepper.
5. Cook the shrimp Heat a drizzle of oil in the same pan as in step 3 on medium-high. Add the zucchini and cook 2-3 minutes on each side until lightly browned. Add the shrimp and cook 4-6 minutes until cooked through. Season with salt and pepper.
6. Plate your dish Serve the crudités and the bread with the whipped feta as a starter. Then, serve the shrimps and zucchini on the couscous with the lemon oil and remaining parsley. Bon appétit!
