Miso Caesar Salad

with grilled chicken, capers and homemade croutons

1. Marinate the chicken In a bowl, place the chicken breasts. Add the spices and a drizzle of olive oil. Season with salt and pepper and leave to marinate until it's time to cook it.
2. Setup Chop the garlic. Cut the lemon in half. Cut the bread into cubes. Cut the lettuce into pieces.
3. Make the croutons In a pan over medium-high heat, add a drizzle of olive oil. Cook the pieces of bread for 4-5 minutes or until golden brown and crispy.
5. Make the sauce In a bowl, combine the mayonnaise, the garlic, the miso paste, the juice of half a lemon and the grana padano. Season generously with pepper. You can adapt the sauce according to the food tastes of the family by leaving items to add to the taste at the service.
6. Plate your dish Just before serving, mix the lettuce with the sauce. Garnish with the croutons, the capers and the chicken. It is also possible to leave everything in the center of the table like a salad bar et let everyone help themselves. Bon appétit!
