1. Cook the potatoesPreheat the oven to 350°F. Peel and cut the potatoes into small cubes. Place in a saucepan with enough water to cover. Add salt. Bring to a boil and cook 5-7 minutes until tender. Drain.
2. SetupChop the garlic, shallot and herbs seperately. Slice the leek in 2 horizontally then thinly slice into half rounds. Drain the shrimp.
3. Cook the vegetables
Heat a drizzle of oil in a pan over medium heat. Cook the shallot, leek, garlic and herbs for 3-4 minutes. Add salt and pepper. Add the cooked potatoes and cook for 2 minutes.
4. Assemble the quicheWhisk the eggs with the yogurt and put in a lightly oiled baking dish with the vegetables and shrimp. Add salt and pepper. Top with the cheese. Bake in the oven for 30-38 minutes until the eggs are cooked in the center.
