with toasted ciabatta and a spinach cucumber cream salad

1. Setup Bring a pot of salted water to a boil. Chop the onion and the garlic. Cut the tomatoes into cubes. Thinly slice the cucumbers. Cut the ciabatta in half and then into 4 pieces.
2. Cook the pasta Cook the pasta 8-10 minutes until tender. Keep 1/4 2P | 1/3 3P cup of the cooking water and drain.
3. Cook the tomatoes Heat a drizzle of oil with 2 tbsp of butter in a pan over medium-high heat. Cook the onion, tomato, garlic and 1 tsp of sugar for 3-4 minutes. Add salt and pepper. Add 1/3 2P | 1/2 3P cup of water and simmer over medium heat for 3-4 minutes. Meanwhile, toss the spinach in a bowl with the cucumber, cream, salt and pepper. Set aside.
4. Make the sauce Crush the tomatoes using a potato masher. Add the tomato paste and 1 tbsp of butter and mix. Add salt and pepper to taste.
5. Add the pasta Add the pasta and the cooking water to the pan. Mix 1 minute. Toast the slices of ciabatta.
6. Plate your dish Serve the pasta with the basil, the salad and the toasted bread. Kids could choose the amount of basil they like. Bon appétit!
