Pear and Date Quinoa "Oatmeal"

with toasted almonds, maple syrup, currants and cinnamon

1. Cook the quinoa Bring a large pot of water to a boil. Cook the quinoa for 10-12 minutes. Drain.
2. Setup Cut the pears into small cubes. Roughly chop the dates.
3. Toast the almonds Heat up a pan over medium-high heat. Roast the almonds in the pan for 3-5 minutes or until colored. Remove from the pan.
4. Cook the pears Add 1-2 tbsp. of butter in the pan with the pears, the dates and half of the maple syrup. Cook 3-5 minutes or until tender.
5. Cook the quinoa Put the cooked quinoa in a pan with the milk, the currants, the cinnamon, the vanilla, a pinch of salt and the rest of the maple syrup. Cook over medium-high heat about 4-5 minutes or until the quinoa absorbs most of the milk.
6. Plate your dish Serve the quinoa and garnish with the pear mixture and the almonds.It is also possible to leave the garnishes in the center of the table and let everyone help themselves. Bon appétit!
