Piri Piri Chicken Breast

with vegetable rice and green salad

1. Setup Cut the pepper and tomato into small cubes. Chop the onion.
2. Cook the rice Heat a drizzle of oil in a saucepan over medium-high heat. Cook the onion, bell pepper, tomato and smoked paprika 2-3 minutes. Add salt and pepper. Add the rice and mix. Add the broth cube and 1.5 2P | 2 3P cups of water. Bring to a boil. Cover and cook over low heat for 12-15 minutes until the rice has absorbed all the liquid.
3. Cook the chicken Mix the chicken breasts with 1-2 tbsp. of the Piri Piri sauce (spicy, adjust to taste for kids). Add salt and pepper. Heat a light drizzle of oil in a pan over medium-high heat. Cook the chicken 3-4 minutes on one side. Flip, cover and cook 7-9 minutes over low heat. Let stand a few minutes before slicing.
4. Plate your dish Break up the lettuce leaves and mix them with a drizzle of oil, salt and pepper. Add vinegar to taste. Serve the chicken with the rest of the sauce, the rice and the salad. Enjoy your meal!
