Piri Piri Sauce Haddock

with rice, spinach, tomatoes and fresh cilantro

1. Cook the rice Bring a pot of water with 1.5 2P | 2 3P cups of water with the spices to a boil. Pour the rice, cover and cook over low heat for 10-12 minutes. As desired, add a knob of butter or a drizzle of olive oil to the rice once cooked.
2. Setup Cut the tomatoes into cubes. Chop the cilantro and shallot. Thinly slice the pepper. It is possible to leave some vegetables aside to serve raw.
3. Cook the fish Pat the fish dry. Add salt and pepper. Heat a drizzle of oil in a pan over medium heat. Cook the fish 2-3 minutes on each side until cooked through. Remove from the pan. Keep warm.
4. Cook the vegetables Add a drizzle of oil to the pan. Cook the shallot, pepper and tomatoes for 4-5 minutes. Add salt and pepper. Add the spinach and the sauce and cook 1-2 minutes.
5. Plate your dish Serve the fish with the rice and the vegetables. Garnish with cilantro. Bon appétit!
