Piri Piri Pork Loin Cubes

1. Cook the couscous Bring a pot of salted water to a boil. Add the couscous and cook 6-8 minutes until tender. Drain and rinse under cold water to cool.
2. Setup Cut the tomato into quarters or cubes. Cut the peppers into thin strips. Cut the olives in half. Thinly slice the basil and the shallot. Cut the pork into cubes.
3. Cook the pork Cut the pork into cubes and put in a bowl with the spices, 1 tbsp. of the sauce, a drizzle of oil, salt and pepper. Mix together. Heat a skillet or a grill over medium-high heat. Cook the pork 1-2 minutes on one side until browned. Flip, cover and cook 4-5 minutes over low heat until the center is cooked through.
4. Plate your dish In a bowl, mix the cooked couscous with the tomato, pepper, olives, shallot to taste, basil, a drizzle of oil, salt and pepper. Add a splash of wine or cider vinegar to taste. Serve the pork with the sauce and salad. Bon appétit!
