Piri Piri Pork Meatballs

with sour cream and bell pepper rice

1. Setup Chop the pepper, shallot, celery and parsley. If your children dislike these vegetables when they're cooked, try serving them as crudités next to their plate.
2. Cook the rice Heat a drizzle of oil in a pot over medium-high heat. Cook the pepper, celery and spices for 2 minutes. Add the rice, salt and pepper and mix. Add the broth cube and 1.5 2P | 2 3P cups of water. Bring to a boil. Cover and cook over low heat for 10-12 minutes. Adjust seasoning to taste. You may want to use less spices to avoid it being too spicy.
3. Cook the meatballs Mix the pork with some of the shallot, salt and pepper. Make 3-4 meatballs per person. Heat a drizzle of oil in a pan over medium heat. Cook the meatballs for 6-8 minutes on each side or until cooked through.
4. Plate your dish Plate the meatballs with the rice, sour cream, Piri Piri sauce (spicy) and garnish with the parsley, then serve. Place everything in the centre of the table and let everyone serve themselves. Bon appétit!
