Pork Banh Mi Sandwich

with carrot, daikon, spicy mayo and cilantro

1. Marinate the pork In a bowl, combine the **fish sauce** and the **brown sugar**. Add the **pork** and coat well. Leave to marinate until it's time to cook it.
2. Setup Separate the **cilantro leaves** from the stems. Cut the **daikon** and **carrot** into sticks. Slice the **cucumber** lenghtwise. Cut the **loaves** in half, lengthwise, without separating them completely.
3. Marinate the daikon and the carrots In a bowl, combine the **carrot and daikon sticks** with 60 ml of hot water, 60 ml of vinegar, 30 ml of sugar, and a pinch of salt. Let marinate and drain just before serving.
4. Cook the pork In a pan over medium-high heat, add a drizzle of oil. Cook the **pork** __3-4 minutes__ on each side. Once cooked, cut into pieces.
5. Assemble Garnish the **bread** with the **spicy mayonnaise**. Add the **pieces of pork**, the **cucumber slices**, the **carrots**, the **daikon** and the **cilantro leaves**.
6. Plate your dish Serve the **pork banh mi sandwiches**. For children, it is possible to cut their portion into small squares to facilitate the grip. Bon appétit!
