1. Cook the chicken Cut the chicken breasts in 2. Place in a saucepan with enough water to cover. Add salt and pepper. Bring to a boil and cook 10-12 minutes until the chicken is cooked. Drain and slice very thinly.

4. Add the demi glace Add the demi-glace and 1.5 2P | 2.5 3P cups of water. Bring to a boil. Reduce the heat to low and simmer 3-4 minutes. Add the chicken slices to the sauce.
5. Blanch the peas Bring a small pot of water to a boil. Blanch the peas for 1 minute. Drain.
6. Plate your dish Top a slice of bread with some chicken and cheese curds. Put a slice of bread on top. Garnish with more chicken, cheese and green peas. For children, it is possible to cut a slice of bread into quarters before garnishing to form two small sandwiches. Bon appétit!
