Pulled Tofu Poutine

with mushrooms, onion and bell pepper

1. Cook the potatoes Preheat the oven to 425°F. Cut the potatoes into medium sized fries. Place on a baking sheet lined with baking paper. Mix with a drizzle of oil, salt and pepper. Bake in the oven for 26-29 minutes until the fries are tender.
2. Setup Grate the tofu. Thinly slice the onion, green onion and mushrooms. Cut the pepper into small cubes.
3. Cook the vegetables Heat a drizzle of oil in a pan over medium high heat. Cook the onion, mushrooms and peppers for 4-5 minutes. Add salt and pepper.
4. Add the tofu Add the tofu and half of the spices. Cook 4-5 minutes until colored. Adjust salt and pepper to taste.
5. Make the sauce Put the demi-glace in a saucepan with the rest of the spices and 1 2P | 1.5 3P cups of water. Bring to a boil and simmer over medium heat for 4-5 minutes until slightly thickened.
6. Plate your dish Serve the fries and garnish with the tofu mixture, cheese, sauce and green onion. Bon appétit!
