BBQ Beef Bowl

with rice, cucumber, sautéed kale and corn

1. Cook the rice Bring 1.5 2P | 2 3P cups of water to a boil. Add the rice, cover and cook over low heat for 10-12 minutes.
2. Setup Coarsely chop the kale. Mince the onion and the cucumbers. Chop the parsley. Put the onion and the cucumbers in a bowl (in 2 separate bowls if the children don't like raw onions) with 2 tbsp of cider or wine vinegar, 1 tbsp of sugar and a pinch of salt. Let marinate. Drain the corn.
3. Cook the kale Heat a drizzle of oil in a pan over medium-high heat. Cook the kale and the corn for 3-4 minutes. Add salt and pepper. Remove from the pan and keep warm. Corn is often liked by kids, so it's a good idea to serve kale along with it. It will be easier for kids to taste a new item if served with something familiar.
4. Cook the beef Add the beef to the pan and cook for 5 minutes. Add half of the BBQ sauce and cook for 1-2 minutes. Add salt and pepper to taste.
5. Plate the dish Serve the beef with the rice and the sautéed and marinated vegetables. Garnish with the rest of the sauce and of the parsley. Serve each part of the meal family-style serving and let your children make their own plate. Bon appétit!
