Seitan Philly "Cheesesteak"

with bell pepper, onion and cheese sauce

1. Cook the potatoes Preheat the oven to 425°F. Cut the potatoes into small cubes. Place on a baking sheet lined with baking paper. Add a drizzle of oil, salt and pepper. Bake in the oven for 20-22 minutes.
2. Setup Thinly slice the pepper into strips. Thinly slice the onion and seitan.
3. Cook the vegetables Heat a drizzle of oil in a pan over medium high heat. Cook the pepper and onion for 4-5 minutes. Add salt and pepper, to taste.
4. Add the seitan Add the seitan slices and the spices. Add a drizzle of oil if necessary. Cook 3-4 minutes. Remove from the pan and keep warm.
5. Make the cheese sauce Wipe the pan a bit. Add 1 tbsp of butter. When the butter is foamy, add the flour and mix. Cook for 30 seconds. Add the milk and whisk until everything becomes a smooth sauce. Add the cheese and cook over medium heat until it's melted. Add salt and pepper to taste.
6. Plate your dish Heat the bread in the oven for 2-3 minutes. Garnish with the seitan, vegetables and cheese sauce. Serve with the potatoes. Bon appétit!
