Shrimp Pad Thai

with edamame, egg, carrot and peanuts

1. Setup Bring a pot of water to a boil. Grate or cut the carrots into very thin strips. Thinly slice the garlic. Chop the cilantro. Crush the peanuts. Remove the tails from the shrimps. Mix the sauce with 1/4 cup of warm water and 1 tbsp. of sugar.
2. Cook the noodles Cook the noodles 1 minute with the edamame. Drain.
3. Cook the shrimp Heat a drizzle of oil in a pan over medium-high heat. Cook the shrimp with the carrots and garlic for 3-4 minutes. Add salt and pepper.
4. Add the noodles Add the egg and mix until cooked. Add the noodles and sauce. The sauce being hot, it's possible to add less, reserve the children's portion, then add the rest of the sauce to the pan. Mix for 1 minute.
5. Plate your dish Serve the noodles and garnish with the cilantro and peanuts. Bon appétit!
