Smoked Meat Tofu Sandwich

with coleslaw, pickle and fries

1. Cook the fries Preheat the oven to 425°F. Cut the potatoes into thin fries. Place on a sheet pan covered with baking paper. Toss with a light drizzle of oil, salt and pepper. Bake in the oven for 24-28 minutes until browned.
2. Setup Bring a small pot of water to a boil (see step 4 for two options to cooking the tofu). Grate the cabbage and carrot. Slice the pickle into quarters.
3. Make the coleslaw In a large bowl, mix the cabbage with the carrot, a drizzle of oil, 1-2 tbsp. cider or wine vinegar, a pinch of sugar, salt and pepper.
4. Cook the tofu Submerge the bag of tofu in the small saucepan of boiling water for 4 minutes. If you prefer, remove the tofu from the packaging and heat it in the microwave for 1 minute.
5. Plate your dish Toast the slices of bread to your liking. Top the bread with mayonnaise and mustard to taste then garnish with the slices of tofu. Serve with the fries, pickle and coleslaw. Bon appétit!
