Soyrizo Tacos

with marinated cabbage, radish cucumber salsa, sour cream and cilantro

1. Setup Cut the cucumber and radish into very small cubes. Chop the cilantro. Cut the lime into wedges.
2. Season the cabbage Put the cabbage in a bowl with 2-3 tbsp. of cider or wine vinegar, 1 tbsp. of sugar and a pinch of salt. Add 2-3 tbsp. of water and mix everything together. Adjust seasoning to taste.
3. Make the salsa In a bowl, mix the radish, cucumber and cilantro with a drizzle of oil, a dash of lime juice to taste, salt and pepper.
4. Cook the soyrizo Heat a drizzle of oil in a skillet over medium high heat. Add the soyrizo and cook for 3-4 minutes until heated through.
5. Plate your dish Heat the tortillas, if desired, in a clean skillet over medium-high heat for about 1 minute on each side. Garnish with the soyrizo, cabbage, radish salsa and vegan mayonnaise. Add lime juice to taste. Bon appétit!
