Spanakopita Pizza

with spinach, feta and pine nuts

1. Setup Preheat the oven to 425 °F. Chop the onion, the garlic and the parsley. Crumble the feta and zest the lemon.
2. Cook the spinach In a pan, on medium-high heat, add a drizzle of olive oil. Cook the onions and the dried oregano to taste for 2-3 minutes. Add the spinach , season with salt and pepper, and cook for another 2-3 minutes. Once the spinach is cooked, remove from the heat. Add the parsley, the lemon zest, the juice of half a lemon and the garlic. Mix well.
3. Prepare the pizza dough On a floured work surface, roll out the pizza dough to make one big pizza or smaller individual pizzas. You can let the kids garnish one of the pizzas, it might be imperfect, but just as delicious.Transfer the dough to a baking sheet lined with parchment paper. Drizzle the dough with olive oil and add a few chili flakes to taste (caution! spicy).
4. Assemble the pizza Evenly spread the spinach mixture on the pizza. Sprinkle with crumbled feta. Bake in the oven for 12-15 minutes.
5. Toast the pine nuts In a dry pan, on medium heat, toast the pine nuts until golden. 1-2 minutes.
6. Plate your dish Once the pizza is cooked, garnish with the toasted pine nuts before serving. Bon appetit!
