Spicy Chipotle Cauliflower Tacos

with pickled radish and tomatillo crema

1. Begin Cauliflower Turn oven on to 425°F with a rack in the centre position and one 6 inches from the top. Line baking sheet with foil. Cut cauliflower into 1/2 inch pieces. Toss cauliflower on baking sheet with 2 tbsp. oil, spice blend and season to taste with salt and pepper. Transfer cauliflower to centre rack in oven and set timer for 17 minutes.
2. Pickle Radish In a small pot, combine pickling base and 1/3 cup water. Bring to a boil. Once boiling, remove from heat and add radish. Season well with salt and set aside.
3. Warm Tortillas Stack tortillas and wrap in foil. Place directly on oven rack and warm for 7–9 minutes until tortillas are warm and pliable. Keep wrapped until ready to serve.
4. Prepare Tomatillo crema and avocado Pick and chop cilantro. Roughly chop pickled jalapeno. In a medium bowl, combine crema base, pickled jalapeno to taste and half of both cilantro and garlic. - Season to taste with salt and pepper. Cut avocado in half and remove pit. Slice into 1/4 inch slices and scoop flesh out with a large spoon.
5. Finish Cauliflower In a large bowl, combine 1 tbsp. hot water, brown sugar, remaining garlic and both lime juice and chipotle in adobo to taste. Once timer goes off, turn broiler on to 500°F. Transfer cauliflower to top rack and broil for 1–3 minutes, until golden and tender. Monitor closely to prevent burning. Gently toss cauliflower in large bowl until well coated.
6. Assemble and Serve Divide tortillas between serving plates. Divide cauliflower and tomatillo crema onto tortillas. Top with avocado, pickled radishes and remaining cilantro. Enjoy!
