Spicy Gochujang Beef Korean Bowl

with kimchi mayo, pickled cucumbers and rice

1. Prepare the rice Rinse and drain sushi rice in a fine mesh sieve. Add rice to a small pot with 1 cup salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 12–15 minutes or until grains are tender.
2. Prepare Ingredients Slice cucumbers into 1/4 inch slices. Thinly slice green onion. Finely chop half of the kimchi.
3. Prepare Marinated Cucumber Salad To medium bowl, add cucumber and carrot. Stir in cucumber marinade and half of the following: sesame seeds and sesame oil. Add salt to taste and set aside to marinate.
4. Prepare Spicy Sauce and Kimchi Mayo In a small bowl, whisk together sauce blend, remaining sesame oil and gochujang to taste. In a second small bowl, combine minced kimchi to taste with mayonnaise.
5. Prepare Gochujang Beef Heat a large non-stick skillet over medium–high. Drain ground beef (or customized protein). Once hot, add ground beef (or customized protein) and use a wooden spoon to break it apart, cooking for 2–3 minutes, until beef begins to brown. Add garlic, ginger and green onion to skillet and cook for 1–2 minutes until fragrant. Stir in prepared spicy sauce and cook for 1–2 minutes until sauce thickens and beef reaches an internal temperature of 165°F. Season to taste with salt and pepper.
6. Plate and Serve Divide rice and cucumber salad between serving bowls. Spoon beef and sauce over rice and garnish with kimchi mayo and remainder of both kimchi and sesame seeds. Enjoy!
