Spinach and Sun-dried Tomato Loaf

with whipped basil goat cheese

1. Setup Preheat the oven to 350°F. Chop the spinach, the sun-dried tomatoes and the basil. Grease a loaf pan or a small baking dish with a light drizzle of oil.
2. Prepare the mix In a large bowl, mix the flour with the baking powder, 1 tbsp. of salt and 1 tbsp. of sugar. In another bowl, melt the butter, then whisk in the milk and eggs.
3. Mix together Add the butter mixture to the bowl of flour along with the sun-dried tomatoes and spinach. Put the mixture the greased dish and bake in the oven for 30-35 minutes or until the center of the bread is cooked. To check for doneness, insert a knife into the center of the bread and see if it comes out clean.
4. Whisk the goat cheese Whip the goat cheese with the cream. Add the basil, salt and pepper.
5. Plate your dish Slice the bread and garnish with the whipped goat cheese. Bon appétit!
