Sumac Chicken and Feta Pea Smash

with dill roasted potatoes

1. Begin Potatoes Turn on oven to 425°F with one rack in the centre position and one 6 inches from the top. Line a baking sheet with foil. Cut potatoes into 1 inch pieces. Zest lemon and cut in half. On one side of baking sheet toss potatoes with 1 tbsp. oil. Season to taste with salt and pepper.
2. Prepare Chicken Drain chicken breast and pat dry with paper towel. - Place chicken onto baking sheet beside potatoes. - Drizzle with 1 tbsp. oil and season well with spice blend, salt and pepper on both sides. - Wash hands with hot, soapy water. - Transfer to center rack and set a timer for 15 minutes.
3. Prepare Ingredients Bring 1/2 litre of salted water to a boil in a medium pot. Pick and chop mint and dill leaves keeping them separate.
4. Prepare Smashed Peas Add green peas to boiling water and cook for 4–6 minutes until tender. Drain in a sieve and transfer peas back into pot. Add 2 tbsp. butter, feta and the following to taste: lemon zest and half of the lemon juice. Using the back of a fork, mash half of the peas or until desired consistency is reached. Season to taste with salt and pepper.
5. Finish Potatoes Once timer goes off from Step 2, turn broiler onto 500°F. Remove from oven and carefully toss potatoes with garlic and flip chicken. Transfer to top rack and broil for 2–3 minutes, or until chicken reaches an internal temperature of 165°F and potatoes are golden and crispy. Monitor closely to prevent burning.
6. Finish and Serve On baking sheet, toss dill with potatoes. Stir mint into smashed peas. Slice chicken into 1/2 inch strips. Divide chicken, potatoes and smashed peas onto serving plates. Drizzle balsamic reduction over chicken to taste. Cut remaining lemon into wedges and serve on the side. Enjoy!
