Sweet Chili Lime Pork Noodles

with peanuts, carrots and bok choy

1. Cook Noodles Bring 2½ litres salted water to a boil in a large pot. Add noodles and cook for 1–2 minutes, or until al dente. Reserve 1/4 cup noodle water. Drain in a sieve and rinse under cold water.
2. Prepare Ingredients Pick and chop cilantro leaves. Slice green onion into 1/2 inch pieces. Cut lime in half. Trim ends, separate leaves and wash bok choy. Slice into 1/4 inch pieces.
3. Make sweet Chili Sauce In a small bowl, whisk together Thai sweet chili sauce, garlic, soy blend and each of the following to taste: sambal oelek, fish sauce and half of the lime juice.
4. Cook Pork and Vegetables Drain pork (or customized protein) and pat dry with paper towel. Season well with salt and pepper. Heat 1/2 tbsp. oil in a large skillet over medium-high. Once hot, add onion to skillet and cook for 1–2 minutes. Add pork and cook 4–6 minutes (3–4 minutes if customized protein was selected), using a wooden spoon to break up pieces, or until golden, crispy and cooked to an internal temperature of 165°F. Add carrot, bok choy and green onion and cook for 2–3 minutes, or until carrots are tender.
5. Finish Dish To pot from Step 1, heat over medium-high and add noodles, pork and vegetables. Add sweet chili sauce and 1 tbsp. noodle water at a time to loosen noodles and desired consistency is reached. Cook for 1–2 minutes, stirring constantly, or until everything is warmed through.
6. Serve Divide sweet chili pork noodles into serving bowls. Garnish with cilantro and peanuts. If desired, squeeze remaining lime over everything. Enjoy!
