Thai Red Curry Paste Ribs

with fries and coleslaw

1. Setup Preheat the oven to 400°F. Cut the carrot into thin strips. Cut the potatoes into matchsticks. Chop the peanuts. Cut the lime. Separate the cilantro leaves from the stems. Slice the hot pepper. If needed, chop the cabbage.
2. Make the fries Spread the potatoes on a baking sheet. Drizzle with olive oil. Season with salt, pepper and cook it in the oven for 30-35 minutes.
3. Make the sauce In a bowl, combine the curry paste, half of the fish sauce and half of the brown sugar.
4. Cook the ribs Spread the ribs on a baking sheet. Brush both sides with the sauce. Cook in the oven for 18-20 minutes.
5. Make the salad In a bowl, combine the lime juice, the rest of the brown sugar and the rest of the fish sauce. Add the cabbage, the carrots, the cilantro, the peanuts and the hot peppers, to taste (caution! spicy). Mix well, season with salt and pepper.
6. Plate your dish Serve the ribs with the fries and the coleslaw. Bon appétit!
