Tofu and Sesame Rice Bowl

with vegetables and miso sesame sauce

1. Cook Rice Turn oven on to 400°F and ensure oven rack is in the centre of the oven. Rinse and drain rice blend in a fine mesh sieve. Add rice to a small pot with 1¼ cups salted water. Bring to a boil, reduce heat to low and cover with a lid. Cook for 20—25 minutes or until grains are tender.
2. Cook tofu and vegetables Cut bell peppers in half and remove stem and seeds. Cut bell peppers into quarters. Drain tofu and pat dry with paper towel. Cut into 1 inch pieces. Line a baking sheet with foil. Place broccoli, sweet potato, bell peppers and tofu on baking sheet. Toss with 2 tbsp. oil, and salt and pepper to taste. Place baking sheet in oven on centre rack. Set a timer for 15 minutes.
3. Prepare Ingredients Thinly slice green onion. Pick and chop cilantro leaves. Remove stem and seeds from jalapeno and cut into 1/8 inch rounds. Zest and cut lime in half.
4. Prepare Sesame Sauce In a small bowl, whisk sauce mix, tahini, garlic and ginger with the following to taste: lime juice and zest. Whisk in 1 tbsp. water at a time until sauce thins and pours freely.
5. Finish Roasting Vegetables and Tofu When timer from Step 2 goes off, turn over vegetables and tofu and set broiler to 475°F. - Broil vegetables and tofu for another 4–6 minutes, turning them 1–2 times until golden and tender. Watch closely to prevent burning. In a medium bowl, toss tofu in 1/4 of the sesame sauce.
6. Assemle and Serve Divide rice into large serving bowls. Divide roasted vegetables and tofu on top of rice. Drizzle remaining sesame sauce over everything. Garnish with green onion, cilantro, seed blend and jalapeno to taste. Enjoy!
