Tuna Patty Pita Sandwich

with egg and pickle yogurt and a herbed vegetable salad

1. Setup Cut the pepper into thin strips. Thinly slice the cucumber and shallot. Cut the pickle into small cubes. Chop the eggs and herbs. Drain the tuna.
2. Make the salad and the sauce Mix 3/4 of the yogurt with the pickle, half of the herbs and half of the eggs. Add salt and pepper to taste. In another bowl, mix the bell pepper with the cucumber, shallot, the rest of the herbs, a drizzle of oil, salt and pepper.
3. Cook the patties Mix the drained tuna with the remaining yogurt, panko, Old Bay spices, salt and pepper. Mix and make 2 small patties per person. Heat a drizzle of oil in a pan over medium-high heat. Cook the patties 2-3 minutes on each side.
4. Plate your dish Warm the pita bread to taste. Garnish with the lettuce, vegetable salad, yogurt, remaining eggs and tuna patties. Bon appétit!
