1. Make a simple syrup Preheat the oven to 350°F. Put 1/3 cup of water in a small saucepan with 1/3 cup of the white sugar and the tea bag and cook over medium heat until the sugar has dissolved, about 3-4 minutes. Transfer to a bowl.
2. Melt the chocolate Bring a small pot of water to a boil. Put the chocolate in a bowl and place over the pot of water over medium heat to make a bain-marie. Stir a few times until the chocolate is completely melted, about 3-5 minutes.
3. Make the mousse Place the crumbled tofu, melted chocolate and simple syrup in a food processor. Mix until homogeneous. Put in a large bowl and freeze 1 hour until the texture has thickened slightly.
4. Make the cookies In a bowl, cream the butter at room temperature with the remaining sugar until the sugar is completely dissolved. Add 50 2P | 75 3P ml of oil and whisk. Add the flour, baking soda, a pinch of salt and vanilla and mix.
5. Bake Make small balls and slightly flatten. Place on a baking sheet lined with baking paper. Bake in the oven for 18-20 minutes.
