Welcome everyone to the latest edition of the weekly favourites! Each week, I sift through the delicious Cook it recipes among the 16 choices available to present you with my culinary highlights. As we kick off the first week of April, I dive into this month with palpable excitement, synonymous with renewal. For me, April evokes spring, freshness, the start of asparagus season, and the first outdoor BBQs. In this week’s selection, you’ll sense how eagerly I await the arrival of this much-anticipated season: dishes to share, seafood and fish, fresh and delicious ingredients

Coconut Shrimp Vermicelli Salad with cucumber, edamame, mint, lime and coconut shavings

This shrimp and coconut milk vermicelli salad is a true explosion of freshness and flavours. The combination of juicy shrimp, creamy coconut milk, crunchy cucumber, tender edamame, fresh mint, tangy lime, and coconut flakes creates a mouthwatering medley of tastes. The coconut milk and lime-based dressing adds an exotic and delightfully fragrant touch to this salad, while the mix of fresh vegetables brings a crunchy texture and a burst of flavours. Each bite of this salad evokes the rejuvenation of spring with its vibrant colours and lively flavours. It’s the perfect choice to celebrate the beautiful season in all its splendour.

Salsa Verde Tuna Tataki with grilled vegetables and ciabatta

Freshness and simplicity converge in this exquisite recipe for Tuna Tataki. Cook it’s tuna steaks have long been one of my favourite recipes, and this tataki variation is no exception. The tuna is simply seared on the outside, retaining its tenderness and vibrant red colour on the inside. What makes this recipe so special is the salsa verde, a refreshing blend of fresh herbs and capers that perfectly complements the delicate flavour of the tuna. To accompany this feast, carefully prepared grilled vegetables, which can be cooked on the barbecue if weather permits, add a touch of rusticity and charm to this already exquisite meal. This recipe is a true delight for the senses, to be enjoyed without restraint.

Gourmet egg sandwich with parsley, arugula and pickle served with a creamy carrot salad

Eggs are one of my favourite sources of protein due to their unparalleled versatility. Their ability to transform into an endless variety of delicious dishes makes them an essential ingredient in my kitchen. That’s why I’m excited to share with you this recipe for a gourmet egg sandwich, accompanied by a creamy carrot salad, which showcases the versatility and delicacy of this simple yet versatile food. Imagine a sandwich overflowing with delicately prepared eggs, combined with a fresh and vibrant mix of chopped parsley, crunchy celery, fresh arugula, and tangy pickles. This simple and flavourful recipe is a delicious way to enjoy eggs in all their forms.

Like every week, I never finalize my meal selection without stopping by the Pantry to complete my box.
