BLT gnocchi

with bacon, tomato, spinach and lemon breadcrumbs

1. Setup Cut the tomatoes into small cubes. Chop the parsley, garlic and shallot. Zest the lemon. Cut the bacon into small pieces.
2. Cook the gnocchi Bring a pot of water to a boil. Cook the gnocchi 3-4 minutes until they float to the surface. Drain.
3. Toast the panko Heat a pan over medium high heat. Toast the panko 4-5 minutes until golden. Remove from the pan and mix with the lemon zest.
4. Cook the bacon Add the bacon to the pan and cook 4-5 minutes until well done and crispy.
5. Add the tomatoes Add the tomatoes, shallot and garlic. Cook 3-4 minutes. Add salt. Add the gnocchi, spinach and 1/4 of the Grana Padano. Mix 2 minutes.
6. Plate your dish Serve the gnocchi and garnish with the parsley, lemon panko, some lemon juice to taste and the Grana Padano. Add pepper to taste. Bon appétit!
