1. Setup
Finely chop the onion, the tomato and the pepper.
2. Cook the bacon
Put the bacon slices in a pan over medium-high heat. Cook 3-4 minutes on each side or until desired doneness. Transfer the bacon onto a paper towel.
3. Cook the eggs
Wipe the pan clean. Heat a drizzle of oil in the pan over medium heat. Add the onion, tomato and pepper. Cook for 2 minutes then add the egg, salt and pepper. Cook to taste.
4. Plate your dish
Heat up the tortillas to taste. Garnish with egg, cheese and bacon and roll. Serve with salsa, guacamole and jalapeños.
