Chipotle Chicken Nachos

with guacamole and lime-yogourt sauce

1. Setup Preheat the oven to 425°F. Cut the tortillas into pieces. Cut the tomato into cubes. Chop half of the cilantro and the pickled jalapeños.
2. Cook the tortillas Spread the tortillas on a baking sheet. Drizzle with olive oil. Cook in the oven for 6-8 minutes.
3. Cook the chicken In a pan over medium-high heat, add a drizzle of olive oil. Add the ground chicken and break it into pieces. Cook for 4-5 minutes. Add the spices, to taste (caution! spicy), the tomatoes and cook for another 2-3 minutes. Season with salt and pepper.
4. Assemble and cook in the oven On the same baking sheet, spread the chicken mixture and the cheese over the tortillas. Cook in the oven for 5-6 minutes.
5. Make the sauce In a bowl, combine the yogurt, the chopped cilantro, the pickled jalapeños and the juice of half a lime. It is possible to make a part of the sauce without the jalapeños for children. Season with salt and pepper.
6. Plate your dish Garnish the nachos with the cilantro, the guacamole and the sauce. Bon appétit!
