Cucumber and Green Grape Gazpacho

with yogurt, herbs, avocado and lime

1. Setup Preheat the oven to 400°F (you can also toast the ciabatta in a toaster and leave the oven off). Cut the shallot and the cucumber into medium-sized pieces. For a smoother soup, peel the cucumber too. Finely chop half of the green onion to keep as garnish. Chop the remaining green onion into big pieces.
2. Cook the bread Cut the bread into slices. Place on a baking sheet and cook in the oven for 7-10 minutes or until colored. Otherwise, cut the bread in 2 and toast it in the toaster.
3. Make the soup Add the cucumber, the green grapes, the garlic, the yogurt, the guacamole, the shallot to taste, the herbs, the pieces of green onion to taste, the lime juice and 180 2P | 270 3P ml of water in a blender. Reduce everything into a smooth soup. Add salt and pepper, to taste.
4. Plate your dish Serve the gazpacho with the bread. Garnish with a drizzle of oil and the green onion. Bon appétit! Gazpacho is a soup made from mixed raw vegetables served cold, very common in southern Spain and southern Portugal.
