Falafel Pita Sandwich

with tzatziki sauce, feta, tomato and cucumber

1. Setup Drain and rinse the chickpeas. Chop the shallot and the parsley. Slice the tomato and the cucumber. Seperate the lettuce leaves.
2. Make the croquettes mixture In a food processor, chop the chickpeas, the flour, the egg, the spice mix, the shallot and the parsley until you obtain a coarse paste. Add salt and pepper to taste. If you don't have a food processor you can crush it by hand using a potato masher. Children are often interested in seeing a blender in action, take the opportunity to show them the ingredients that go into the mix, they will be curious to give it a taste.
3. Fry the croquettes Heat a generous amount of oil in a pan over medium-high heat. Add dollops of the chickpea croquette mixture in the pan and fry on both sides for 3-4 minutes until golden brown. Remove from the pan and place onto paper towels. Repeat until you have use all the mixture.
4. Plate the dish Cut the pitas in half and fill each half with all the ingredients. Bon appétit!
