1. SetupPreheat the oven to 425°F. Put the puff pastry on a baking sheet lined with baking paper. Set aside. Chop the spinach and onion. Slice the zucchini and tomato into thin rounds.
2. Whip the goat cheesePut the goat cheese in a food processor with the cream and the herbs. Pulse until everything is smooth.
3. Garnish the doughPut the zucchini, spinach and onion in a bowl. Add a drizzle of oil, salt, pepper and mix. Top the puff pastry with the goat cheese, vegetables and tomato slices. Fold the edges of the dough inwards. Lightly oil the edges. Bake 20-24 minutes until browned.
4. Plate your dishServe. Bon appétit!
