Garlic Butter Chicken Breast

with brown rice and broccoli apple salad

1. Cook the rice Rinse the brown rice. Bring a large pot of water to a boil. Add the rice and cook for 18-20 minutes or until the rice is tender. Drain. Season to taste.
2. Setup Cut the broccoli into small pieces. Chop the garlic and the parsley. Coarsely chop the pistachios. Cut the apple into cubes.
3. Make the garlic butter In a bowl, mix 2 2P | 3 3P tbsp. butter with the garlic and half of the parsley.
4. Cook the chicken Pat the chicken breasts dry and season with salt and pepper. In a skillet over medium heat, add a drizzle of oil. Add the chicken breasts and cook 4-5 minutes on each side. Reduce the heat to low, add the garlic butter, cover and cook for another 3-4 minutes while basting the chicken a few times with the garlic butter.
5. Make the salad In a bowl, combine the broccoli, apples, the raisins, the pistachios, the rest of the parsley and the yogurt. Add a drizzle of oil, salt and pepper and mix. Let your children develop their cooking skills by inviting them to mix all the ingredients together.
6. Plate your dish Serve the chicken with the rice and the broccoli salad. Bon appétit!
