Goat Cheese Baked Eggs

with mushrooms, spinach, potatoes and ciabatta

1. Cook the potatoes Preheat the oven to 400°F. Cut the potatoes into very small cubes. Place in a saucepan with enough water to cover. Bring to a boil and cook 6-8 minutes until tender. Drain.
2. Setup Thinly slice the mushrooms and spinach. Chop the shallot. Crumble the goat cheese. Whisk the eggs with the cream, salt and pepper in a bowl.
3. Cook the mushrooms Heat a drizzle of oil and 1 tbsp. of butter if desired in an ovenproof skillet over medium-high heat. Cook the shallot and mushrooms for 3-5 minutes. You can use a regular skillet then transfer everything to a baking dish for step 5.
4. Add the potatoes Add the potatoes, spices to taste and spinach and cook for 2-3 minutes. Generously season with salt and pepper.
5. Add the eggs Add the eggs and goat cheese to the skillet or transfer everything into a baking dish. Bake in the oven for 18-22 minutes or until the eggs are cooked.
6. Plate your dish Cut the bread in 2 and heat it in the oven for 8-10 minutes until colored. Serve the eggs with the bread. Bon appétit!
