Honey Mustard Chicken Burger

with fries and sun-dried tomato arugula salad

1. Marinate the chicken In a bowl, combine the honey mustard, the chicken, salt and pepper and mix well. Leave to marinate until ready to cook.
2. Setup Preheat the oven to 425°F. Cut the potatoes into matchsticks. Zest the lemon and cut it in half. Chop the garlic and the sun-dried tomatoes.
3. Make the fries Spread the potatoes on a baking sheet. Brush with olive oil, salt and pepper. Bake for 30-35 minutes.
4. Cook the chicken In a pan over medium-high heat, add a drizzle of olive oil. Add the chicken and cook for 3-4 minutes on each side or until cooked through.
5. Make the salad In a bowl, combine the sun-dried tomatoes, the garlic, to taste, the lemon zest, the juice of half a lemon and a drizzle of olive oil. Add the arugula, season with salt, pepper and mix well.
6. Plate your dish Toast the buns, if desired. Assemble the burgers with the mayonnaise, the chicken and the salad. Serve with the fries. It is also possible to leave the garnishes in the center of the table and let everyone help themselves. Bon appétit!
