Orange and Chocolate French Toast

with homemade cinnamon caramel and mascarpone

1. Setup In a bowl, mix together the egg and the zest and juice from an orange. Cut the other orange into segments.
2. Make the caramel Prepare 2 2P | 3 3P tbsp of butter. Heat a pan over medium heat. Add the sugar and melt until into a golden-coloured caramel. Do not mix. Remove the pan from the heat and add the butter, the cream and the cinnamon. Heat again if the mixture is too thick. Mix well. Add a pinch of salt if desired.
3. Cook the french toast Melt a generous knob a butter in a pan over medium heat. Dip the bread into the egg and orange mixture and cook in the pan for 4-5 minutes until the bread is golden brown. Add more butter if needed.
4. Plate your dish Add the chocolate chips between two slice of French toast. Sprinkle cacao powder over. Garnish with mascarpone, orange segments and caramel. To add a playful touch, you can cut the French toast into strips and serve the caramel and mascarpone as a dip. Bon appetit!
