1. SetupPreheat the oven to 400°F. Slice the onion into wedges. Cut the zucchini into rounds or half rounds. Cut the bell pepper into strips. Crumble the feta. Cut the potatoes into small cubes.
2. Cook the sheet panPlace the pepper, onion and zucchini on a baking sheet lined with baking paper. Add the spices to taste, a drizzle of oil, salt and pepper. Mix together. Add the sausages to the pan. Bake everything in the oven for 22-25 minutes.
3. Cook the potatoesPut the potatoes in a saucepan with enough water to cover. Season with salt. Bring to a boil and cook 12-14 minutes until tender. Drain. Mash with a bit of butter and milk to taste. Adjust salt and pepper to taste.
4. Plate your dishServe the vegetables and sausages over mashed potatoes. Garnish with the feta, basil and a drizzle of oil to taste. Bon appétit!
