Spanakopita Hummus

with spinach, feta, pistachios, dill and za'atar

1. Setup Preheat the oven to 400°F. Chop the pistachios, garlic and dill. Thinly slice the onion. Cut the pita into triangles. Drain and rinse the chickpeas.
2. Bake the chips Place the pita triangles on a sheet pan. Bake in the oven for 6-8 minutes or until browned.
3. Cook the onion Heat a drizzle of oil in a frying pan over medium heat. Cook the onion and garlic for 3-4 minutes or until colored. Add the spinach and cook for 1-2 minutes. Add salt and pepper to taste.
4. Make the hummus Place the chickpeas, pan of spinach, tahini, half the dill, za'atar, juice of half a lemon and 3/4 cup oil in a food processor. Pulse until you get a hummus. Add more or less oil to taste. Adjust salt and pepper to taste. Serve with the chips and garnish with the pistachios, remaining dill, crumbled feta and lemon juice to taste. Fun fact: Spanakopita is a traditional Greek pie of spinach, feta cheese and seasonings baked in phyllo dough. For this recipe, we took the main ingredients of Spanakopita (spinach and feta) and incorporated them into a homemade hummus. Bon appétit!
