1. SetupPreheat the oven to 375°F. Cut the sun-dried tomatoes into pieces. Cut the cherry tomatoes in 2. Thinly slice the onion. Tear off the thyme. Cut the butter into cubes.
2. Cook the tomatoesPut the onion, tomatoes and half the thyme in a baking dish. Add a drizzle of oil, salt and pepper and mix well. Bake in the oven for 14-16 minutes.
3. Make the toppingMeanwhile, put the oats, cornmeal, remaining thyme, spices and Parmesan in a bowl. Mix together. Add the butter cubes and knead by hand until the butter is incorporated and the mixture is crumbly.
4. Add the toppingRemove the baking dish from the oven. Add the crumbled goat cheese and the breadcrumbs over the tomatoes. Return to the oven for 16-18 minutes until browned.
