Tomato Salted Clafoutis

with caramelized shallots, goat cheese and basil served with ciabatta bread

1. Setup Preheat the oven to 375°F. Cut the shallots into rings. Cut the cherry tomatoes in half. Chop the basil.
2. Make the caramelized shallots In a pan, on medium heat, add the shallots, 1 tbsp of butter, a drizzle of olive oiland 1 tbsp. of sugar. Cover and cook for 10-15 minutes.
3. Make the egg mixture In a bowl, mix the eggs, the cream and the flour. Season with salt and pepper and add the caramelized shallots.
4. Cook the clafoutis Butter an oven safe dish then add the egg and shallot mixture. Crumble the goat cheese on top. Add the tomatoes and the basil. Cook in the oven for 20-25 minutes.
5. Plate your dish Slice the bread in half and place on a baking sheet. Heat in the oven 10-12 minutes if desired or use a toaster. Serve the caramelized shallot clafoutis with the bread. Bon appetit!
